Spiced Quinoa with Sweet Potatoes

This is a healthy and delicious dish you can make after your morning workout. It is made with the perfect amount of spice, I know you will want to make it as often as possible. Makes: 6 servings

Total Prep Time: 45 minutes

Ingredients:

1 ¾ cups of quinoa

3 cups of low sodium chicken broth

Dash of salt and black pepper

3 Tbsp. of vegetable oil

½ of a red onion, thinly sliced

2 cloves of garlic, chopped

1 Tbsp. of powdered ancho chile

1 tsp. of powdered coriander

½ tsp. of powdered cumin

1 red jalapeno pepper, seeds removed and thinly sliced

2 sweet potatoes, peeled and cut into small pieces

1/3 cup of cilantro, chopped

1 to 2 Tbsp. of lime juice
